Sweet Potato Green Bean Amandine
yields: 6 servings
1 ½ pounds green beans, stem end trimmed
3 Tablespoons of sweet potato butter
½ cup of toasted, sliced almonds
Juice and zest of 1 lemon
¼ cup finely diced shallots
salt and freshly ground black pepper, to taste
Instructions: Bring a large pot of water, seasoned well with salt, to a boil. In a large mixing bowl (ideally this bowl will comfortably rest on top of the pot containing the boiling water) combine the sweet potato butter, shallots, and lemon juice & zest. Add the green beans to the boiling water and place the bowl containing the butter on top. Reduce the heat and cook the green beans till tender, about 1-2 minutes. Using a sieve, pull the green beans from the water once tender and place in the bowl. Toss well with the now melted sweet potato butter. Taste for seasoning and then transfer to serving dish. Garnish with toasted almonds.
Pro Tip: Stove top space is hard to come by, especially when preparing a large holiday meal. Using the heat from the boiling pot is a great way to keep ingredients warm, while freeing up much needed space.
